Wash apples. Cut apples into fourths/sixths – do not peel or core. Place apple pieces in large pan with ¾ cup water and cook over medium heat, stirring regularly. When apples have cooked down (about 30 minutes), stir in sugar and cinnamon. Cook another five minutes, stirring regularly. Run apple mixture through a colander, about 1/3 of the apple mixture at a time. Eat warm or cool. Refrigerate. Makes 2 ½ – 3 quarts of applesauce.
